摘  要:近年来人们对健康和酒精滥用问题越来越重视,无醇啤酒进入人们视野中。虽然目前市场上的无醇啤酒多种多样,但是由于技术的限制以及工艺方法的不同等因素,仍然无法弥补其本身的缺点,所以人们一直在研究新的无醇啤酒酿造工艺。通过对现阶段国内外已有的无醇啤酒酿造工艺、感官品评、后期修饰、成本控制等方面进行综述,并提出了进一步改进的可能性,找出更理想的酿造工艺,期望获得口感更佳、风味独特的无醇啤酒。In recent years,people pay more and more attention to health and alcohol abuse,and alcoholfree beer has entered people’s vision.Although there are a variety of alcohol-free beer on the market at present,due to some factors such as technical limitations and different process methods,there is still no one alcohol-free beer that can make up for its shortcomings.Therefore,people have been studying the new brewing technology of alcohol free beer.The existing alcohol free beer brewing process,sensory evaluation,later modification and cost control at home and abroad were summarized,puts forward the possibility of further improvement,finds out a better brewing process,and expects to obtain alcohol free beer with better taste and unique flavor.
