摘 要:以莲子淀粉为原料,采用酸解法制备莲子淀粉纳米晶,通过扫描电子显微镜、激光粒度仪、凝胶渗透色谱、X-射线衍射、傅里叶红外光谱等对莲子淀粉纳米晶的结构进行表征。研究结果表明,莲子淀粉纳米晶的颗粒形态为方形片状和球型,结晶结构仍为C型,淀粉颗粒的晶型结构没有发生改变。当酸水解条件为:硫酸浓度4.0 mol/L,40℃条件下水解5 d,莲子淀粉纳米晶的粒径最小、结晶度最高、分子质量最小。莲子淀粉纳米晶与其他种类淀粉纳米晶相关研究的文献进行对比发现:莲子淀粉纳米晶的颗粒形态同时包含了A型和B型结晶结构的淀粉纳米晶的颗粒形态,其颗粒大小略大于其他种类淀粉纳米晶。该研究为淀粉纳米晶的理化及功能特性研究提供一定理论依据。In the present paper,lotus seed starch(LS)was used in the preparation of lotus seed starch nanocrystals(LS-SNCs)by acid hydrolysis and characterized by scanning electron microscopy,laser particle size,gel permeation chromatography,X-ray diffraction and Fourier transform infrared spectroscopy.The results indicated that the morphology of LS-SNCs was square-flake or spheroid,the crystal structure was still C-type,and the main structure of starch particles was not changed.When the acid hydrolysis condition was 4.0 mol/L sulfuric acid hydrolysis for 5 days at the temperature of 40℃,the grain size,crystallinity and molecular weight of LS-SNCs were the smallest,the highest and the smallest.The comparison between the LS-SNCs and other kinds of starch nanocrystals(SNCs)indicated that LS-SNCs was C-type SNCs and the grain morphology of LS-SNCs includes the grain morphology both of A-type SNCs and B-type SNCs,the particle size of LS-SNCs was slightly larger than that of other kinds of SNCs.The study was expected to provide some theoretical basis for the follow-up study of SNCs.
