摘 要:近年来,随着食品安全问题的屡屡出现,社会越来越关注食品安全问题,对食品检验技术的要求也相应提高。合理应用食品检验技术,以保证消费者餐桌上的安全,已经成为食品安全研究的重要课题。食品微生物检验是食品检验中的主要项目之一,食品微生物检验技术应用的主要目的是检测食品的微生物指标是否符合安全标准。只有检验合格的食品才能投放到市场中,这样可以最大限度提高食品质量,提升食品安全,减少存在微生物污染隐患的食品对消费者健康的威胁。基于此,笔者分析了我国食品微生物检验的主要项目以及特点,并且简述该技术在食品安全中的具体应用措施。In recent years,with the repeated occurrence of food safety issues,the society has paid more and more attention to food safety issues,and the requirements for food inspection technology have also increased accordingly.The rational application of food inspection technology to ensure the safety of consumers on the table has become an important topic in food safety research.Food microbiological inspection is one of the main items in food inspection.The main purpose of the application of food microbiological inspection technology is to detect the microbial indicators of food whether it meets the safety standards.Only food that has passed the inspection can be put on the market,which can maximize food quality,improve food safety,and reduce the threat to consumers’health from food with hidden microbial contamination.Based on this,the author analyzes the main items and characteristics of food microbiological inspection in China,and briefly describes the specific application measures of this technology in food safety.
