摘  要:为了探讨肉桂精油可食性复合膜的抑菌效果,通过双倍稀释法测定了肉桂精油对大肠杆菌、金黄色葡萄球菌、酿酒酵母的最小抑菌浓度(MIC)和最低杀菌浓度(MBC);采用牛津杯法测定了肉桂精油及肉桂精油复合膜对3种供试菌的抑菌圈直径。结果表明,肉桂精油对3种菌均具有一定的抑制作用,对大肠杆菌、金黄色葡萄球菌、酿酒酵母的抑菌圈直径分别为26.38,34.28,48.07 mm,MIC分别为0.25,0.25,0.125μL/mL,MBC分别为1,4,0.125μL/mL;肉桂精油复合膜能较好地保持肉桂精油的抑菌活性,对3种供试菌的抑制作用顺序相同,均为酿酒酵母>金黄色葡萄球菌>大肠杆菌,且随着肉桂精油含量的提高,复合膜的抑菌作用增强,不含肉桂精油的复合膜没有显示抑菌活性,肉桂精油含量从0.5%增加至2.5%时,大肠杆菌的抑菌圈直径由15.26 mm增大到48.98 mm,金黄色葡萄球菌从21.55 mm增大到54.43 mm,酿酒酵母则由30.52 mm扩大到平板上没有菌生长。该研究结果为复合膜的推广应用提供了参考。In order to investigate the antibacterial effect of edible composite film of cinnamon essential oil,the minimum inhibitory concentration(MIC)and minimum bactericidal concentration(MBC)of cinnamon essential oil against Escherichia coli,Staphylococcus aureus and Saccharomyces cerevisiae are determined by double dilution method;Oxford cup method is used to determine the inhibition zone diameters of cinnamon essential oil and cinnamon essential oil composite film against the three kinds of tested bacteria.The results show that cinnamon essential oil has a certain inhibitory effect on the three kinds of bacteria.The diameters of inhibition zones against Escherichia coli,Staphylococcus aureus and Saccharomyces cerevisiae are 26.38,34.28,48.07 mm respectively,the MIC are 0.25,0.25,0.125μL/mL respectively,and the MBC are 1,4,0.125μL/mL respectively;cinnamon essential oil composite film can better maintain the antibacterial activity of cinnamon essential oil.The order of the inhibitory effect on the three tested bacteria is the same,that is Saccharomyces cerevisiae>Staphylococcus aureus>Escherichia coli.With the increase of cinnamon essential oil content,the antibacterial effect of the composite film increases.The composite film without cinnamon essential oil does not show antibacterial activity.When the content of cinnamon essential oil increases from 0.5%to 2.5%,the diameter of inhibition zone against Escherichia coli increases from 15.26 mm to 48.98 mm,that against Staphylococcus aureus increases from 21.55 mm to 54.43 mm,and that against Saccharomyces cerevisiae expands from 30.52 mm to no bacteria grow on the plate.The research results have provided references for the popularization and application of composite film.
