摘  要:以紫外分光光度法探究从铁皮石斛鲜花中提取的多酚氧化酶的酶学性质。结果表明,以邻苯二酚作底物,在460 nm波长条件下,测得铁皮石斛鲜花中提取的多酚氧化酶性质:酶添加量1 mL,酶活性最适pH 6.2,最适底物浓度0.03 mol/L,最适温度30℃,抗坏血酸是试验中抑制效果最佳的抑制剂。The Dendrobium officinale Kimura et Migo flowers were used as raw materials to extract polyphenol oxidase, and the catechol was used as the substrate to make the exploration of its enzymatic properties under the ultraviolet spectrophotometry at 460 nm. According to the results, it was indicated that the optimal condition of enzymatic activity of polyphenol oxidase extracted by using Dendrobium officinale Kimura et Migo flowers was as follows: the addition of 1 mL of enzyme, the optimal pH of 6.2 of enzyme activity. Under 0.03 mol/L of the optimal substrate concentration, the optimum temperature was 30 ℃, and the ascorbic acid was the inhibitor with the best inhibitory effect in this experimental study.
