摘  要:近些年来,随着全球范围内耐药性细菌的出现,需要开发新的天然杀菌剂解决这一问题。噬菌体作为抗菌药物的替代品已经广泛应用于家禽、家畜及水产养殖中,以防控动物源性食品中的病原菌。本研究就应用噬菌体对动物源性食品中致病菌防控的研究进展、噬菌体治疗的优势及面临的挑战等几方面进行综述,为噬菌体制剂在动物源性食品病原菌防控方面的研究及应用提供参考。In recent years,with the emergence of drug-resistant pathogens all over the world,it is necessary to develop new antibacterial substitutes to solve this problem.Bacteriophage has served as an alternative to antibiotics in poultry and aquaculture animals for the purpose of controlling bacterial pathogens in animal-derived food.This review summarizes the general situation of bacteriophages,research progress of the application of bacteriophage in the prevention and control of pathogenic bacteria in animal-derived food,advantages and challenges of bacteriophage therapy with the aim of providing reference for research and application of bacteriophage preparations in the prevention and control of pathogenic bacteria in animal-derived food.
