摘　　要：“食品工艺学”的实验教学在课程中具有非常重要的作用,且对仪器设备要求较高。虚拟仿真实验不同于传统的实验模式,它利用有趣的虚拟画面给学生带来丰富的学习体验。结合虚拟仿真软件进行实验教学授课,可以缩小传统实验教学的局限性,使学生快乐学习,实验教学效果得到有效提高。分析了“食品工艺学”传统实验教学中存在的问题,探讨利用虚拟仿真技术进行“食品工艺学”实验教学授课的优势、不足及解决措施,将虚拟实验与真实实验二者结合进行实验教学,以期提高“食品工艺学”实验教学的质量,为培养食品专业高水平人才提供新的教学思路。The experimental teaching of Food Technology plays a very important role in the course,and it has high requirements for instruments and equipments.Virtual simulation experiment is different from the traditional experimental mode.It makes use of interesting virtual pictures to bring students rich learning experience.Experimental teaching combined with virtual simulation software can narrow the limitations of traditional experimental teaching,make students learn happily,and effectively improve the effect of experimental teaching.This paper analyzed the problems existing in the traditional experimental teaching of Food Technology,discussed the advantages,disadvantages and solutions of experimental teaching of Food Technology with virtual simulation technology.In order to improve the quality of experimental teaching and provide new teaching ideas for cultivating high-level talents of food specialty,the combination of virtual simulation experiments and real experiments are used for experimental teaching.
