摘 要:概述了阿洛酮糖的理化特性及生理功效,总结了国内外制备D-阿洛酮糖的方法。结合产业化过程中遇到的问题,从食品安全的角度阐述了各种不同来源生物酶基因的挖掘和改造应注意的问题,包括重组菌株的选择以及酶的最适反应条件优化等,对阿洛酮糖产业化制备和市场前景进行了展望。The physicochemical properties and physiological effects of alluose were summarized.The methods of preparing D-allulose at home and abroad were summarized.Combined with the problems encountered in the process of industrialization, the problems that should be paid attention to in the mining and transformation of biological enzyme genes from different sources were expounded from the perspective of food safety, including the selection of recombinant strains and the optimization of the optimal reaction conditions of enzymes.The demand for aloxose and its industrial preparation were prospected.
