摘  要:目的:分析探讨南极磷虾蛋白肽的抗氧化活性及稳定性。方法:通过测定自由基清除能力以及脂质过氧化抑制能力,系统评价南极磷虾蛋白肽的抗氧化活性,并考察温度、酸碱度、模拟胃肠道消化等条件对其稳定性的影响。结果:南极磷虾蛋白肽对DPPH自由基、ABTS自由基、羟自由基和超氧阴离子自由基均具有较强的清除作用,IC_(50)分别为5.68、0.32、9.54、1.68 mg/mL;同时,南极磷虾蛋白肽对亚油酸、蛋黄卵磷脂等脂质过氧化具有良好的抑制作用。南极磷虾蛋白肽在温度>60℃条件下,抗氧化活性显著下降(P<0.05);在中性及弱酸性条件下较稳定,在碱性条件下抗氧化活性急剧下降(P<0.05);经体外模拟胃肠道消化后仍能保持较高的抗氧化活性。结论:南极磷虾蛋白肽具有较好的抗氧化活性,其相关产品的加工贮藏应避免高温、强酸、强碱条件的影响。研究结果可为南极磷虾蛋白肽的品质保持和相关高值产品开发提供科学指导。Objective:The antioxidant activity and stability of the Antarctic krill(Euphausia superba)peptides were investigated.Methods:Free radical scavenging capacity and lipid peroxidation inhibition ability of the Antarctic krill peptides were determined,while the effects of temperature,pH and simulated gastrointestinal digestion on the antioxidant activity of the Antarctic krill peptides were evaluated.Results:Antarctic krill peptides exhibited good scavenging abilities of the DPPH radical,ABTS radical,hydroxyl radical and superoxide anion radical with IC_(50)of 5.68,0.32,9.54,1.68 mg/mL,respectively.Antarctic krill peptides could inhibit the lipid peroxidation of linoleic acid and egg lecithin.High temperature(>60℃)had significant influence on the antioxidant activity of the Antarctic krill peptides(P<0.05).The antioxidant activity of the Antarctic krill peptides decreased sharply under alkaline conditions(P<0.05),which could maintain relatively stable under neutral and weak acidic conditions,as well as high activity after simulated gastrointestinal digestion in vitro.Conclusion:Antarctic krill peptides had good antioxidant activity,while the processing and storage of its related products should avoid the high temperature,strong acid and strong alkali conditions.The present research would provide scientific guidance for the quality maintenance and further application of the Antarctic krill peptides.
