摘  要:富硒酵母是利用酵母开发出来的一种有机硒源,在健康支持和人体的各种生理活动中都扮演着至关重要的角色,如预防肿瘤、降三高(高血压、高血脂、高血糖)、提高机体免疫力。目前多国官方已经批准富硒酵母作为特殊医学用途食品硒源。本文将对富硒酵母功能作用研究进展以及在国内外特殊医学用途配方食品中应用的法规现状进行系统的梳理和分析,希望对我国的特医食品发展有一定启示和借鉴意义。Selenium-enriched yeast is an organic selenium source developed from yeast,it plays a vital role in supporting human health and human physiological activities,such as preventing tumors,reducing hypertension,hyperlipidemia,and hyperglycemia,and improving immunity. At present,many countries have officially approved selenium-enriched yeast as a selenium source for foods for special medical purposes. This paper systematically reviewed and analyzed the research progress of selenium-rich yeast functions as well as the current status of laws and regulations on the application of selenium-rich yeast in foods for special medical purposes at home and abroad,it provides some inspiration and reference for the development of foods for special medical purposes in China.
