摘  要:菜籽蛋白是一种来源丰富、价格低廉、氨基酸组成均衡的优质植物蛋白资源。虽然其功能特性还不够突出,但近年来,随着对菜籽分离蛋白改性的报道越来越多,改性后的蛋白的功能特性得到了改善,分别发展为载体、膜、活性肽等,并被用于食品和生物医学行业。从菜籽粕中提取的菜籽分离蛋白因其营养价值高而被广泛应用于各种饲料中。文章对前人在菜籽分离蛋白功能特性、生物医学材料应用、菜籽肽、发酵菜籽粕等方面的研究进行了总结,以期为今后菜籽分离蛋白的研究和应用提供参考。Rapeseed protein is a high-quality plant protein resource with abundant sources,low price and balanced amino acid composition.Although its functional characteristics are not prominent enough,in recent years,with more and more reports on the modification of rapeseed protein isolate,the functional characteristics of the modified proteins have been improved,and they are respectively developed as carriers,membranes,active peptides,etc.,which are used in food and biomedical industries.Rapeseed protein isolate extracted from rapeseed meal has been widely used in various feedstuffs because of its nutritional advantages.In this paper,previous studies on the functional characteristics of rapeseed protein isolate,the application of biomedical materials,rapeseed peptide,fermented rapeseed meal and so on were summarized,which will provide reference for the future research and application of rapeseed protein isolate.
