摘　　要：阐述了卫生标准操作程序(SSOP)中的五性(5X):清蒸稻壳的非贮性、粮糟泼浆的随意性、窖皮泥的易染性、贮存酒体的吸附性和成品酒体的排他性,对浓香型白酒生产的影响。有效控制五性对酒体的危害,使SSOP得以有效实施,确保HACCP体系的正常运行,为浓香型白酒的质量和安全提供保障。The paper describes the 5X in SSOP: nonstorage property of steamed rice hull, the randomness of sprinkling amount of hot water,infectibility of sealing mud, absorbability of stored Bajiu, exclusiveness of finished Bajiu, and influence of 5X on nongxiangxing Bajiu production. Effectively control the harm of 5X to Bajiu for the effective implementation of SSOP and the normal operation of HACCP systerm,to ensure the quality and safety of nongxiangxing Bajiu.
