摘  要:香露兜为典型热带园艺作物,为研究其叶片最佳护色工艺,以香露兜叶片为试验材料,在单因素试验确定氯化钙为最佳护色剂以及处理时间、温度及其护色剂浓度范围的基础上,采用Box-Behnken法设计响应面试验对最佳护色工艺参数进行优化研究,确定香露兜叶片护色最佳工艺,为香露兜叶片加工护色提供技术方案。单因素试验结果表明:最佳护色剂为氯化钙,初步确定时间、温度、最佳护色剂浓度最适范围分别为20s~40s、55℃~65℃、0.60%~1.00%;响应面优化结果表明:时间32s、温度55℃、氯化钙浓度1.00%时护色效果最佳。通过最佳护色工艺处理的香露兜叶片可在一定时间内保持良好的色泽,且护色效果好,为香露兜叶片加工上的护色提供了一定的理论支撑。Pandanus amaryllifolius Roxb.was a tropical horticultural crop.In order to study the best color-protecting technology,the leaves of Pandanus amaryllifolius Roxb.were used as experimental materials.The result of single factor test showed that calcium chloride was the best color fixative,and the treatment time,temperature and concentration range of color fixative were also determined.Based on the single factor test results,the Box-Behnken test design and response surface analysis were used to optimize the process parameters for providing best color-protecting technology of the pandanus leaves.The results of single factor test showed that the best color fixative was calcium chloride,and the optimal range of time,temperature and concentration of the best color fixative were 20s-40s,55℃-65℃,0.6%-1.0%,respectively.Response surface optimization results showed that the best color protection effect was achieved at 32s,55℃and 1%calcium chloride concentration.The leaves of pandanus treated with the best color protection technology could maintain good color in a certain period of time,and the color protection effect was good,which could provide a certain theoretical support for the color protection of pandanus leaves in processing.
