摘 要:以分离自青贮燕麦中的植物乳杆菌L-Z1为研究对象,以黄曲霉为指示菌,通过测定L-Z1对黄曲霉生物被膜、细胞膜通透性、磷代谢和呼吸系统酶活性的影响,从而初步阐明L-Z1对黄曲霉的抑菌作用和抑菌机制。结果表明:加入植物乳杆菌L-Z1后,黄曲霉抑菌圈直径为(17.15±0.23)mm(7.8 mm被含),生物被膜抑制率高达56.6%,黄曲霉的可溶性总糖和可溶性蛋白含量增加,磷代谢和呼吸系统酶的活性均降低,证明植物乳杆菌L-Z1对黄曲霉具有较强抑菌性,抑菌机制是减弱黄曲霉的细胞呼吸作用及破坏细胞膜。In this study,Lactobacillus plantarum L-Z1 isolated from silage oats was used as the research object,and Aspergillus flavus was used as the indicator bacteria.Therefore,the antibacterial effect and antibacterial mechanism of L-Z1 on Aspergillus flavus were preliminarily clarified.The results showed that:after adding Lactobacillus plantarum L-Z1,the inhibition zone cliameter of Aspergillus flavus was(17.15±0.23)mm(7.8 mm was contained),the biofilm inhibition rate was up to 56.6%,the content of soluble total sugar and soluble protein of Aspergillus flavus increased,phosphorus metabolism and respiratory enzymes activities were decreased,which proved that Lactobacillus plantarum L-Z1 had strong antibacterial activity against Aspergillus flavus.The bacteriostatic mechanism is to weaken the cellular respiration and destroy the cell membrane of Aspergillus flavus.
