摘  要:为了改善青稞的口感,提高青稞中可溶性膳食纤维的功能特性,采用纤维素酶、木聚糖酶酶解青稞全粉提取可溶性膳食纤维。通过单因素试验、正交试验优化青稞可溶性膳食纤维的酶法提取工艺条件,并比较分析了不同酶法提取的可溶性膳食纤维的理化特性。结果表明,纤维素单酶酶法提取工艺参数为水分含量24%,酶解时间30 min,酶添加量0.3%,酶解温度40℃,pH值4.0,可溶性膳食纤维提取率高达25.47%;木聚糖单酶酶法提取工艺参数为水分含量24%,酶解时间50 min,酶添加量0.3%,酶解温度30℃,pH值4.75,可溶性膳食纤维提取率高达29.544%。其中,木聚糖单酶酶法提取率最高,提取的可溶性膳食纤维持水力、持油力、膨胀力、葡萄糖吸附能力、胆酸钠吸附能力等性质最优,分别为4.0194 g/g,4.3875 g/g,2.9188 mL/g,9.933 mmoL/g,89.563 mg/g,木聚糖单酶酶法可作为青稞全粉可溶性膳食纤维的最优提取方法。In order to improve the taste of barley and enhance the functional properties of soluble dietary fiber in barley,cellulase and xylanase enzymes were used to extract soluble dietary fiber from whole barley powder.The enzymatic extraction process conditions of barley soluble dietary.The results showed that the process parameters of cellulose single enzyme extraction were:water content 24%,enzymatic hydrolysis time 30 min,enzyme addition 0.3%,enzymatic hydrolysis temperature 40℃,pH 4.0,and soluble dietary fiber extraction rate as high as 25.47;The process parameters of xylan single enzyme extraction are:water content 24%,enzymatic hydrolysis time 50 min,enzyme addition 0.3%,enzymatic hydrolysis temperature 30℃,the extraction rate of soluble dietary fiber was as high as 29.544%with pH 4.75.Among them,the extraction rate of xylan monoenzyme enzyme method was the highest,and the propertie fiber were optimized by single-factor and orthogonal tests,and the physicochemical properties of soluble dietary fiber extracted by different enzymatic methods were compared and analyzed.s of extracted soluble dietary fiber such as water holding capacity,oil holding capacity,swelling capacity,glucose adsorption capacity and sodium cholate adsorption capacity were the best,which were 4.0194 g/g,4.3875 g/g,2.9188 mL/g,9.933 mmoL/g and 89.563 mg/g,respectively.The enzymatic method of xylan monoenzyme can be used as the optimal extraction method for soluble dietary fiber.
