摘  要:在白酒酿酒实验过程中,通常使用受外部影响较小且所需原辅料用量较少的固态发酵设备,以模拟白酒固态发酵过程,同时采集发酵过程中的相关指标。分析与探讨了一种基于物联网在线监测的白酒固态发酵实验装置,该装置包括发酵装置、取样装置、保温装置、物联网在线监测系统等部分。其中,发酵装置由桶体、桶盖、排气孔、篦子板、黄浆水收集仓、排水口1、取样孔等部分组成,保温装置由加热水箱、输送水管、水泵、进水口、排水口2、保温夹层等部分组成,物联网在线监测系统由检测器和物联网监测系统组成。该装置能最大程度模拟白酒固态发酵,同时能够及时对发酵过程中的水分、酸度、温度和二氧化碳排放量等数据进行收集。该装置设计合理,符合设备安全要求,可以满足白酒固态发酵的工艺要求。Solid-state fermentation equipment with less external influence,less raw and auxiliary materials is usually used to simulate the solid-state fermentation process during Baijiu brewing experiments,and collect the relevant indexes in the fermentation process.The paper analyzed and discussed a Baijiu solid fermentation experimental device based on online monitoring of the internet of things,which includes fermentation device,sampling device,insulation device,online monitoring system of the internet of things,etc.The fermentation device is composed of barrel body,barrel cover,exhaust hole,grate plate,yellow pulp water collection bin,drain 1,sampling hole and other parts.The insulation device is composed of heating water tank,conveying pipe,water pump,water inlet,drain 2,insulation sandwich and other parts.The internet of things online monitoring system is composed of detector and internet of things monitoring system.The device can simulate solid fermentation of Baijiu to the maximum extent,and collect the data of moisture,acidity,temperature and carbon dioxide emission in time during fermentation.The design of the device is reasonable,meets the safety requirements of the equipment,which can meet the technical requirements of Baijiu solid fermentation.
