摘  要:该研究采用液液萃取(LLE)结合气相色谱-质谱联用(GC-MS)检测多粮浓香型双轮底调味酒陈酿过程中(0~10年)风味物质的含量,并结合香气活度值(OAV)分析风味组分的变化规律。结果表明,调味酒陈酿0~10年过程中,己酸乙酯、辛酸乙酯、2-戊酮、丁酸乙酯、异戊酸乙酯起绝对的香气主导作用,24种风味物质的OAV变化范围较大,其中己酸乙酯、辛酸乙酯等20种风味成分的OAV整体呈减小趋势,减小范围较大的为乙酸丁酯、乙酸己酯、乙酸异戊酯、己酸丁酯、丁酸己酯,且乙酸丁酯和乙酸己酯的OAV在第10年降至1以下,说明其在陈酿过程中对于酒体的香气贡献逐渐减小甚至消失;己酸、乙缩醛、3-羟基-2-丁酮、异丁酸乙酯的OAV整体呈增大趋势,在陈酿过程中的风味贡献逐年增加。The content of flavor substances in multi-grain strong-flavor(Nongxiangxing)double-round bottom flavouring liquor during the aging process(0-10 years)was detected by liquid liquid extraction(LLE)combined with gas chromatography-mass spectrometry(GC-MS),and the change rule of flavor components was analyzed by combining with odor activity value(OAV).The results showed that in the aging process of flavouring liquor for 0-10 years,the ethyl caproate,ethyl octanoate,2-pentanone,ethyl butyrate and ethyl isovalerate played an absolute dominant role,the OAV of 24 flavor substances changed greatly,among which the OAV of 20 flavor substances such as ethyl caproate,ethyl octanoate decreased gradually.The OAV reduction ranges of butyl acetate,hexyl acetate,isoamyl acetate,butyl hexanate and butyrate were large,and the OAV of butyl acetate and hexyl acetate fell to below 1 in the 10th year,indicating that the aroma contribution to the liquor body gradually decreased or even disappeared.The OAV of hexanic acid,acetaldehyde,3-hydroxyl-2-butanone and ethyl isobutyrate gradually increased,and the flavor contribution increased year by year in the aging process.
