摘 要:以乳铁蛋白、表没食子儿茶素没食子酸酯(epigallocatechin-3-gallate,EGCG)和低甲酯果胶组成的三元凝聚体为连续相,大豆油为分散相,构建高内相Pickering乳液(high internal phase Pickering emulsions,HIPPEs),评价3种自组装顺序对HIPPEs结构特性、3D打印特性、贮存稳定性及冻融稳定性的影响。结果表明:自组装顺序直接影响三元凝聚体稳定HIPPEs的能力。由乳铁蛋白、EGCG和低甲酯果胶组成的三元凝聚体粒径介于1.7~2.9μm之间,表现出不同程度的网络结构和表面润湿性(介于55.62°~68.15°之间)。光学微流变和质构研究表明,HIPPEs的黏弹性以及硬度、黏附性和咀嚼性从高到低的顺序为:乳铁蛋白-EGCG-低甲酯果胶>乳铁蛋白-低甲酯果胶-EGCG>低甲酯果胶-EGCG-乳铁蛋白;由乳铁蛋白-EGCG-低甲酯果胶稳定的HIPPEs倾向于类固体,更适合3D打印。微观结构表明所稳定的HIPPEs是通过Pickering稳定机制稳定的水包油乳液体系。由乳铁蛋白-EGCG-低甲酯果胶稳定的HIPPEs表现出优异的长期贮存稳定性和冻融稳定性,这对于其在冷链物流中的潜在应用具有重要意义。总之,在利用三元复合物体系稳定HIPPEs时,自组装顺序这一因素不可忽略,需要特别关注。In this study,the effect of three self-assembly sequences on the structural properties,three-dimensional(3D)printing characteristics,storage stability and freeze-thaw stability of high internal phase Pickering emulsions(HIPPEs)stabilized by ternary aggregates of lactoferrin,epigallocatechin-3-gallate(EGCG)and low methoxylated pectin was evaluated.The results showed that self-assembly sequence directly affected the ability of ternary aggregates to stabilize HIPPEs.The particle sizes of the ternary aggregates were between 1.7 and 2.9μm,and they showed different network structures and surface wettabilities(between 55.62°and 68.15°).Optical microrheology and texture analysis showed that the decreasing order of the viscoelasticity,hardness,adhesiveness and chewiness of HIPPEs was lactoferrin-EGCG-low methoxylated pectin>lactoferrin-low methoxylated pectin-EGCG>low methoxylated pectin-EGCG-lactoferrin.The HIPPE stabilized by lactoferrin-EGCG-low methoxylated pectin was solid-like and more suitable for 3D printing.The microstructure showed that these HIPPEs were oil-in-water Pickering emulsions.It is particularly noteworthy that the HIPPE stabilized by lactoferrin-EGCG-low methoxylated pectin showed excellent long-term storage stability and freeze-thaw stability,which is of great significance for its potential application in cold chain logistics.In conclusion,when using ternary complexes to stabilize HIPPEs,self-assembly sequence is an important factor that cannot be ignored.
