摘  要:为改善牛肉的质构特性,将超声波辅助超高压处理技术应用到牛肉的嫩化处理中,对其硬度、弹性和咀嚼性进行研究。结果表明,超高压处理压力、超声波处理温度和超声波处理时间均对牛肉起到一定的嫩化作用,能够改善牛肉质构特征,不同程度地降低其硬度、弹性和咀嚼性。超声波辅助超高压处理压力后的牛肉结缔组织总胶原蛋白和可溶性胶原蛋白的含量随着处理压力的升高而增加。通过响应面法对回归模型进行预测,结果表明,对于牛肉的嫩度值各因素影响程度大小顺序为:超声波处理温度>超高压处理压力>超声波处理时间。通过优化验证,当超高压处理压力为302.52 MPa,超声波处理时间为41.37 min,超声波处理温度为23.31℃时牛肉的剪切力值最小。In order to improve the texture characteristics of beef,ultrasonic assisted ultra-high pressure(UHP)treatment was applied to beef tenderization to study its hardness,elasticity and chewiness.The results showed that the ultra-high pressure treatment pressure,ultrasonic treatment temperature and ultrasonic treatment time all played a certain role in tenderizing beef,which could improve the texture characteristics of beef and reduce its hardness,elasticity and chewiness.The content of total collagen and soluble collagen in connective tissue of beef treated under pressure with ultrasonic and ultra-high pressure increased with the increase of processing pressure.Response surface method was used to predict the regression model.The results showed that the order of influencing degree of each factor on beef tenderness value was ultrasonic treatment temperature>ultra-high pressure treatment pressure>ultrasonic treatment time.Through the optimization verification,when the ultra-high pressure treatment pressure was 302.52 MPa,the ultrasonic treatment time was 41.37 min,and the ultrasonic treatment temperature was 23.31℃,the shear force of beef was the minimum.
