摘  要:醋龄是影响消费者选购镇江香醋的重要因素,但是,目前市场上镇江香醋醋龄标注混乱,亟待科学准确的方法进行规范和识别。为了建立准确快速识别不同醋龄镇江香醋的方法,采用电子鼻技术对食醋醋龄进行鉴别。在利用主成分分析(principal component analysis, PCA)对电子鼻检测参数中的样本瓶体积和样品量进行优化的基础上,采用电子鼻对6种不同醋龄(新醋、醋龄6个月, 12个月, 18个月, 48个月和78个月)镇江香醋进行识别,线性判别分析(linear discriminant analysis, LDA)、支持向量机(support vector machine, SVM)和反向传播神经网络(backpropagation neural network, BPNN)三种模式识别方法被用来进行醋龄识别建模。在样本瓶体积50 mL和样品量2 mL时获得的识别效果最佳, LDA、SVM和BPNN三种模式识别方法均取得较好的效果, BPNN要略优于LDA和SVM方法,其训练集和测试集识别正确率分别为98.75%和97.5%。电子鼻是一种快速和较为有效区分不同醋龄镇江香醋的方法。The ages of vinegar were an important factor affecting the consumers to buy Zhenjiang aromatic vinegar.However,the ages of vinegar are marked confusedly currently on the market at present,so we urgently need scientific ways to correct and discriminate the ages of vinegar.In order to establish a method for discriminating different ages of Zhenjiang aromatic vinegar quickly and accurately,the electronic nose was used to discriminate vinegar age frstly.On the basis of optimizing detection parameters of electronic nose(sample vial and the sample volume)by principal component analysis(PCA),we used electronic nose to discriminate Zhenjiang aromatic vinegar in six different ages(new vinegar,the vinegar ages of 6 months,12 months,18 months,48 months and 78months).And linear discriminant analysis(LDA),support vector machine(SVM)and back-propagation neural network(BPNN)were used to build up models to discriminate vinegar ages.The results showed that discrimination results were the best when the sample vial was 50 mL and the sample volume was 2 mL,the three kinds of pattern recognition method of LDA,SVM and BPNN achieved good results,and the performance of BPNN was better than that of LDA and SVM,whose discrimination accuracy rate in the training set and test set achieved 98.75%and 97.5%respectively.The electronic nose was a rapid and effective method to discriminate different ages of Zhenjiang aromatic vinegar.
