摘  要:食品安全监督管理工作关系到人们的饮食安全,食品在生产、加工、包装、流通以及销售的整个产业链过程中,易受到周围环境的影响导致污染,增加腹泻、中毒、呼吸道等疾病的发生风险。检测技术是食品监督管理工作的重要工具,快速检测技术可现场抽样检测,不需要存储密封带入实验室进行检测,可快速得出检测结果,将其应用在食品监督管理工作中,对保障人们饮食安全具有重要意义。本文主要分析了快速检测技术的优势,同时探讨了化学比色法、酶抑制法、免疫学和生物传感等技术在食品监督管理中的应用。The food safety supervision and management work is related to people’s food safety.Throughout the entire industrial chain of food production,processing,packaging,circulation and sales,it is susceptible to pollution caused by the surrounding environment,increasing the risk of diseases such as diarrhea,poisoning,and respiratory tract infections.Detection technology is an important tool for food supervision and management.Rapid detection technology can be used for on-site sampling inspection,and it does not need to be stored and sealed into the laboratory for testing.It can quickly obtain the detection results.Its application in food supervision and management is of great significance to ensure the safety of drinking and eating of the masses.This paper mainly analyzes the advantages of rapid detection technology,and discusses the application of chemical colorimetry,enzyme inhibition,immunology and other common rapid detection technologies in food safety supervision.
