摘 要:为了对乳酸菌细菌素研究领域的发展趋势有更全面的了解,文章以2002—2021年间基于Web of Science平台SCI-E数据库中的2 059篇乳酸菌细菌素的相关文献作为研究对象,运用文献计量在线分析平台和CiteSpace可视化软件,从文献数量、国家/地区发文量及合作关系、研究机构、发文期刊、研究方向和关键词等方面进行知识图谱分析。结果表明:2002—2021年间乳酸菌细菌素研究的发文量呈现逐年递增的趋势,2 059篇文献来源于94个国家/地区、1 517个机构和399个出版物;西班牙在2002—2021年间发文量排名世界第一,中国在2021年发文量跃居世界第一;乳酸菌细菌素研究方向集中在微生物学、食品科学技术、生物工程与应用微生物学等领域;核苷酸序列、革兰氏阳性菌和生物膜是突现强度高的关键词。对乳酸菌细菌素的深入研究将使其应用领域得到进一步扩展。In order to gain a more comprehensive understanding of the trends in the research field of lactic acid bacteria bacteriocin,2 059 literatures about lactic acid bacteria bacteriocin in the SCI-E database based on Web of Science from 2002 to 2021 were selected as research objects.Bibliometrics online analysis platform and Cite Space visualization software were used to conduct knowledge graph analysis from the aspects of the number of literatures,the number of literatures published in countries/regions and cooperation relationships,literature research institutions,journal of publication,research directions and key words.From 2002 to 2021,the number of literatures on lactic acid bacteria bacteriocin increased year by year.A total of 2 059 literatures were from 94 countries or regions,1 517 institutions and 399 publications.Spain ranked first in the world in published literature from 2002 to 2021,while China ranked first in published literature in 2021.The research direction in the field of lactic acid bacteria bacteriocin focused on Microbiology,Food Science Technology,Biotechnology Applied Microbiology.Nucleotide sequence,gram-positive bacteria and biofilm were the most prominent key words.It could provide a useful reference for the future development trend of lactic acid bacteria bacteriocin in the food field.
