摘 要:生物功能活性物质对机体有益,在启动、塑造和调节肠道微生物群中可发挥关键作用,采用以抗性淀粉为壁材的微胶囊包埋技术可有效解决生物功能活性物质体内利用率低及稳定性差等问题,同时具有不易被酶解、精准释放等良好特性。文章总结了抗性淀粉微胶囊的常用制备方法及优势,简述抗性淀粉在不同生物功能活性物质传递系统中的应用,并分析了影响生物功能活性物质释放的因素,为后续抗性淀粉微胶囊的有关研究提供思路。Bioactive substances are beneficial to the body and play a key role in initiating,shaping and regulating the intestinal microbiota.The microcapsule embedding technology with resistant starch as the wall material can not only solve the problems of low utilization rate and poor stability of bioactive substances in vivo,but also exhibit good characteristics,such as low enzymatic hydrolysis rate and accurate release property,etc.In this paper,the common preparation methods and advantages of resistant starch microcapsules were summarized,and the application of resistant starch in different delivery systems of biologically active substance was further described.In addition,the factors that influence the release efficiency of bioactive substances in resistant starch microcapsules were also analyzed.This paper is aimed to lay a foundation and provide useful information for future research studies on resistant starch microcapsules.
