摘  要:以8个欧李品系为试材,采用顶空-固相微萃取和气质联用技术测定欧李鲜果中的挥发性物质、果实内含物含量,探讨香气成分与内含物质的关系。结果表明,8个欧李品系共检出芳香物质55种,主要为酯类、醇类、醛酮类、酸类、烃类、酚类、杂环类等,以乙酸丁酯(C_(7)H_(11)NO_(2))、乙苯(C_(8)H_(10))、3-甲基-2-丁烯醇(C_(5)H_(10O))、对二甲苯(C_(8)H_(10))和三氯乙烯(C_(2)HCl_(3))为主。香气成分与内含物质相关性分析表明,酯类相对含量与Vc含量呈显著正相关,与硬脂酸含量呈显著负相关。香气物质的构成在品系间具有差异性,每个品系都有自身特有的香气物质,且部分香气成分与内含物有显著关系。In order to study the relationship between aroma components and contents,the volatile substances in fresh fruits of Prunus humilis Bunge were determined by headspace solid-phase microextraction and GC-MC.The results show that:a total of 55 aromatic substances were detected in 8 plums,which were mainly esters,alcohols,aldehydes,acids,hydrocarbons,phenols,heterocyclic,etc.and mainly composed of n-butyl acetate(C_(7)H_(11)NO_(2)),ethylbenzene(C_(8)H_(10)),3-methyl-2-butenol(C_(5)H_(10O)),p-xylene(C_(8)H_(10))and trichloroethylene(C_(2)HCl_(3)).The correlation analysis between aroma components and contents showed that the relative content of esters was significantly positively correlated with Vc content and negatively correlated with stearic acid content.The composition of aroma substances was different among the 8 strains of Prunus humilis Bunge.Each strain had its own unique aroma substances,and some aroma components were significant related to their content,which provided a reference for better evaluation and development of germplasm resources of Prunus humilis Bunge.
