摘 要:本研究以青稞为原料,以总酚含量为指标,采用单因素试验及Box-Behnken响应面设计优化超声波处理富集青稞多酚的最佳工艺参数,并在此基础上比较超声波处理前后青稞的总酚含量及抗氧化活性差异。结果表明,超声波处理富集青稞多酚的最优工艺为:超声温度35℃,超声时间30 min,超声功率500 W,在此条件下青稞中总酚含量为636.15 mg/100 g。抗氧化活性结果表明,经超声处理后的青稞其DPPH·清除能力及FRAP还原能力均显著高于未处理样品。该研究可为进一步提高青稞的利用价值提供参考。This study was based on highland barley as the raw material.The content of total phenolic were used as indicators to determine the optimal process parameters of ultrasonic treatment for the enrichment of highland barley polyphenols by the single factor test and Box-Behnken response surface design.Then the total phenol content and antioxidant activity of black barley were compared before and after ultrasonic treatment.The results showed that the optimal conditions of ultrasonic pretreatment were as follows:ultrasonic treatment temperature 35℃,ultrasonic treatment time 30 min,ultrasonic power 500 W.Under these conditions,the content of the total phenol content reached 636.15 mg/100 g.The results of antioxidant activity showed that the DPPH·scavenging capacity and FRAP reducing capacity of ultrasonically treated barley were significantly higher than those of untreated samples.This study could provide a reference for further improving the utilization value of highland barley.
