摘  要:近几年,动植物蛋白混合作为膳食中的蛋白源引起广泛关注,大豆蛋白与乳清蛋白在功能性质上具有协同作用,如增加氨基酸的代谢和稳定。为阐明大豆-乳清蛋白对Sprague-Dawley(SD)大鼠机体免疫的影响,随机将大鼠分为4组,对照组饲喂标准饲料,3个实验组在标准饲料的基础上更换蛋白源,分别为乳清蛋白、大豆蛋白和大豆-乳清蛋白,实验期为60 d。通过测定血清生化指标、免疫球蛋白质量浓度、免疫器官指数、脾淋巴细胞增殖指数和自然杀伤细胞活力评估大鼠的免疫力。结果表明,血清生化指标反映出大豆-乳清蛋白可提高大鼠机体的免疫能力,大鼠免疫器官指数和免疫球蛋白显著性增加(P<0.05),大豆乳清蛋白可提高脾脏淋巴细胞和NK细胞活力(P<0.05),因此,饲料中的蛋白源为大豆-乳清蛋白时可提高正常SD大鼠的免疫能力。In recent years,as dietary protein sources,animal and plant protein mixtures have attracted widespread attention.Soy protein and whey protein had synergistic effects on functional properties,such as increasing amino acid metabolism and stability.To investigate the effects of soy-whey protein on immunity of Sprague-Dawley(SD)rats,the rats were randomly divided into 4 groups,the control group was fed standard diet,and the 3 experimental groups were fed standard diet based on whey protein,soy protein and soy-whey protein,respectively.The experiment lasted for 60 days.The immunity of rats was evaluated by measuring serum biochemical indexes,immunoglobulin mass concentration,immune organ index,splenic lymphocyte proliferation index and natural killer cell activity.The results indicated that soybean whey protein could improve the immune capacity of rats,the immune organ index and immunoglobulin of rats were significantly increased(P<0.05),and soybean whey protein could improve the activity of spleen lymphocytes and NK cells(P<0.05).Therefore,Dietary protein source of soy-whey protein can improve the immune capacity of normal SD rats.
