摘  要:利用微波消解法对郫县豆瓣中的矿物质元素和重金属元素进行测定,结果表明工厂郫县豆瓣中30个样品的矿物质元素Mg、Ca、Fe、Al、Mn和Zn的最大值分别是最小值的3.2,3.74,2.23,10.03,5.41,15.71倍;家庭郫县豆瓣中20个样品的矿物质元素Mg、Ca、Fe、Al、Mn和Zn的最大值分别是最小值的3.01,4.15,8.41,18.66,4.84,8.37倍;工厂加工的豆瓣中超标的重金属包括Cr、Pb和Hg,家庭加工的豆瓣中没有重金属超标情况发生。此外,通过电子鼻和电子舌分析郫县豆瓣香气成分中的氮氧化合物、硫化物、萜类化合物和甲基类化合物在豆瓣中的贡献情况,线性方式分析得到豆瓣中主要成分的贡献率为94.85%(超过90%),能够清晰地区分不同发酵期的豆瓣,说明利用电子鼻和电子舌系统可以检测郫县豆瓣的发酵程度,对郫县豆瓣的实际生产有重要意义。The mineral elements and heavy metal elements in Pixian broad bean paste are determined by microwave digestion method.The results show that the maximum values of Mg,Ca,Fe,Al,Mn and Zn in 30 samples of Pixian broad bean paste from factories are 3.2,3.74,2.23,10.03,5.41,15.71 times of the minimum values respectively;the maximum values of mineral elements Mg,Ca,Fe,Al,Mn and Zn in 20 samples of household Pixian broad bean paste are 3.01,4.15,8.41,18.66,4.84,8.37 times of the minimum values respectively;the heavy metals that exceed the standard in factory broad bean paste include Cr,Pb and Hg,while there are no instances of heavy metals exceeding the standard in household broad bean paste.In addition,the contribution of nitrogen oxides,sulfides,terpenoids and methyl compounds in the aroma components of Pixian broad bean paste to broad bean paste is analyzed by electronic nose and electronic tongue.According to the linear analysis,the contribution rate of the main components in the broad bean paste is 94.85%(more than 90%),which can clearly distinguish the broad bean paste in different fermentation stages,indicating that using electronic nose and electronic tongue system can detect the fermentation degree of Pixian broad bean paste,which is of great significance to the actual production of Pixian broad bean paste.
