摘 要:矿物油源于石油,是碳数在10~50的烃类混合物,主要分为饱和烃和芳香烃。前者在人体内有蓄积效应,后者存在潜在的致畸性和致癌性,对人体健康的风险不容忽视。近年来,食品中矿物油污染问题引起了广泛关注,其定量分析和相关毒理学研究必不可少。本文综述了国内外不同食品种类的矿物油分析进展和定量分析方法,为我国后续开展市售食品中矿物油污染的情况调查提供参考。Mineral oil is derived from petroleum and is a hydrocarbon mixture with a carbon number of 10 to 50,mainly divided into saturated hydrocarbons and aromatic hydrocarbons.The former has an accumulation effect in the human body,while the latter has potential teratogenicity and carcinogenicity,and the risks to human health cannot be ignored.In recent years,the problem of mineral oil pollution in food has attracted wide attention,and its quantitative analysis and related toxicology research are essential.This paper summarizes the analysis progress and quantitative analysis methods of mineral oil in different food types at home and abroad,which provides reference for the subsequent investigation of mineral oil pollution in marketed food in China.
