摘  要:白酒生产过程关键物质测定对白酒质量控制、指导实际生产尤为重要,传统化学分析具有工作量大、耗时长、前处理繁琐、不能及时指导生产等诸多问题。光谱分析技术制样简单,检测方便快捷,在实际工农业生产过程中发挥着重要作用。该文综述了近10年来光谱分析技术的发展、基本原理及其在白酒行业的研究应用进展,检测内容依次涉及白酒酿酒原料、窖池环境、糖化发酵剂、酒醅、基酒以及成品酒。并对今后光谱技术在白酒行业的应用发展方向进行了展望,旨在为光谱分析技术在白酒行业的深入应用提供参考依据。The determination of key substances in Baijiu production process is particularly important for Baijiu quality control and guiding actual production.The traditional chemical analysis has many problems,such as heavy workload,long time consuming,tedious pretreatment and unable to guide the production in time.Spectroscopic analysis technology is simple in sample preparation,convenient in detection,and plays an important role in the actual industrial and agricultural production process.In this paper,the development,basic principle of spectroscopic analysis technology and its research application progress in Baijiu industry in recent 10 years were reviewed.The detection contents involved Baijiu brewing ingredients,pit environment,saccharification starters,fermented grains,base liquor and finished liquor.The future development direction of spectroscopic analysis technology in Baijiu industry was forecasted,in order to provide reference for the further application of spectroscopic analysis technology in Baijiu industry.
