摘  要:以福建安溪铁观音为乌龙茶发花原料,以湖南安化产黑茶茶砖提取“金花菌”为菌种接种至乌龙茶散茶中,选取不同的含水量、接种量试验组,探究乌龙茶发花最佳工艺流程参数。结果表明:乌龙茶发花的最佳含水量为30%,在该条件下,冠突散囊菌生长茂盛,茶香浓郁。乌龙茶发花的最佳接种量为0.1%,在该条件下,冠突散囊菌生长茂盛,茶香浓郁,咖啡碱含量最少。黑茶有益菌冠突散囊菌除在黑茶中生长良好外,在乌龙茶中也可成功接种,且接种后产生茶多酚等物质,改善乌龙茶的保健功能。Tieguanyin is used as the raw material for oolong tea flowering,and the‘golden blossom fungus’extracted from the black tea bricks of Anhua,Hunan Province is used as the strain to inoculate into oolong tea powder tea.Different water content and inoculation amount are selected to explore the best technological process parameters for oolong tea flowering.The results show that the optimum water content of oolong tea is 30%.Under this condition,the golden blossom fungus grows luxuriantly and the tea fragrance is rich.The optimum inoculation amount of oolong tea is 0.1%.Under this condition,the golden blossom fungus grows luxuriantly,the tea fragrance is rich,and the caffeine content is the least.In addition to the good growth in black tea,the beneficial bacteria of black tea crown sporangium can also be successfully inoculated in oolong tea,and tea polyphenols and other substances can be produced after inoculation to improve the health function of oolong tea.
