摘 要:为获得适宜酿造脐橙果酒的优良本土酿酒酵母(Saccharomyces cerevisiae),该研究利用WLN培养基从脐橙果园土壤、枝叶和果皮分离野生酵母菌株,对不同Interdelta基因型中的代表菌株进行酿造学特性分析,将优良菌株应用于脐橙果酒酿造,并对脐橙果酒的品质指标进行分析。结果表明,共分离得到90株野生酵母菌,分为4个WLN培养类型,其中酿酒酵母菌分为3种基因型;通过对3个基因型的12株酿酒酵母进行酿造学特性评价,获得优良本土酿酒酵母菌株T11和F25,其具有发酵启动快、发酵能力强和良好凝聚性,均能在体积分数16%乙醇、300 mg/L SO2及糖含量60%的培养基中生长,且表现出较强产乙醇、产酯和低产H2S能力。酿酒酵母T11酿造的脐橙果酒醇类物质含量较高,达到2226.65 mg/L;酿酒酵母F25酿造物脐橙果酒酯类成分有17种,醛酮类物质含量较高,为1196.07 mg/L。因此,本土酿酒酵母F25和T11具有应用于脐橙果酒工业生产的潜力和价值。In order to obtain excellent native Saccharomyces cerevisiae suitable for navel orange wine brewing,the wild yeast strains were isolated using WLN medium from navel orange orchard soil,branches and leaves,and pericarp.The brewing characteristics of representative strains of different Interdelta genotypes of S.cerevisiae were analyzed,the excellent S.cerevisiae strains were applied to navel orange wine brewing,and the quality index of the wine was analyzed.The results showed that 90 wild yeasts were isolated and divided into 4 WLN culture types,among which S.cerevisiae were divided into 3 genotypes.Through the evaluation of the brewing characteristics of 12 strains in the 3 genotypes of S.cerevisiae,excellent local S.cerevisiae strains T11 and F25 were obtained.The two strains showed fast fermentation start-up,strong fermentation ability and good cohesiveness,which could grow in the medium with volume fraction 16%ethanol,300 mg/L SO2 and 60%sugar content,and showed strong ethanol,ester and low H2S production capacity.The alcoholic substances of navel orange wine brewed by S.cerevisiae T11 was high,which was 2226.65 mg/L.There were 17 kinds of esters in F25 Navel orange wine fermented by F25,the contents of aldehydes was high,which was 1196.07 mg/L.Therefore,the native S.cerevisiae F25 and T11 had the potential and value in the production of navel orange wine.
