摘  要:随着人们对调味品健康、营养、安全需求的提高,调味品中的污染物问题受到越来越多的关注。液相色谱-串联质谱(LC-MS/MS)技术具有灵敏度高、准确性好、选择性强等优点,在调味品安全检测方面发挥着重要作用。文章对近5年来LC-MS/MS技术在调味品中污染物检测方面的研究进展进行了综述,重点讨论了液相色谱-低分辨串联质谱及液相色谱-高分辨串联质谱在测定调味品中真菌毒素、发酵副产物、非法添加物方面的应用,并对其未来发展趋势进行了展望,提出将具有定量优势的低分辨串联质谱与具有定性优势的高分辨串联质谱相结合的必要性。With the improvement of people's requirements for the healthy,nutritious and safe condiments,the contaminants in condiments have received more and more attention.Liquid chromatography-tandem mass spectrometry(LC-MS/MS)has the advantages of high sensitivity,good accuracy and strong selectivity,and plays an important role in the safety detection of condiments.In this paper,the research progress of LC-MS/MS in the determination of contaminants in condiments in recent five years is reviewed,focusing on the application of liquid chromatography-low resolution tandem mass spectrometry and liquid chromatography-high resolution tandem mass spectrometry in the determination of mycotoxins,fermented by-products and illegal additives,the future development trend is prospected,and the necessity of combining the quantitative low resolution tandem mass spectrometry and the qualitative high resolution tandem mass spectrometry is proposed.
