摘 要:随着生活水平提高,消费者对食品安全和质量的要求越来越高。动物源食品中的兽药残留问题备受关注,直接影响人类健康。研究分析了动物源食品在热加工(如煮沸、油炸、蒸、烤、烘烤、微波等)、非热加工(如辐照、漂洗等)及储存(室温、冷藏、低温)过程中兽药残留的降解率,旨在了解研究现状,为食品产业和消费者提供了建议:采用高温烹饪、低温储存和辐照等加工方法可以有效减少部分兽药残留。一些加工工艺既能减少兽药残留,又能保持食品品质,如辐照处理蜂蜜或使用盐溶液漂洗鱼肉。With the improvement of living standards,consumers have higher demands for food safety and quality.The issue of veterinary drug residues in animal-based food has attracted much attention as it directly affects human health.This study analyzes the degradation rate of veterinary drug residues in animal-based food during various processing methods such as heat treatment(boiling,frying,steaming,baking,roasting,and microwaving),non-thermal processing(irradiation and washing),and storage(room temperature,refrigeration and low temperature).The aim is to understand the current research status and to provide suggestions for the food industry and consumers.It is found that using high-temperature cooking,low-temperature storage,and irradiation can effectively reduce some veterinary drug residues.Certain processing techniques can not only decrease veterinary drug residues,but also maintain food quality,such as irradiation treatment of honey or using salt solution to wash fsh meat.
