摘  要:猴头菌富含多种蛋白质、氨基酸、多糖、黄酮类、二萜类等营养物质和生物活性物质,有着极高的营养价值和药用价值。目前关于猴头菌的培养发酵大都以液体发酵为主,固体发酵具有代谢产物丰富、能耗低、不易发生大面积污染等特点,用于发酵猴头菌具有显著优势。该文综述了猴头菌固体发酵技术,介绍发酵基质的选择和发酵条件的调控,并对猴头菌固体发酵产生的以多糖类、黄酮类和二萜类为主的三类活性物质含量的变化及影响因素进行归纳整理和阐述分析,以期为猴头菌固体发酵技术的研究提供参考。Hericium erinaceus is rich in nutrients and bioactive substances such as protein,amino acid,polysaccharide,flavonoids,and diterpenoids,and has high nutritional and medicinal value.At present,the culture fermentation of H.erinaceus is mainly liquid fermentation,and solid-state fermentation has the characteristics of abundant metabolites,low energy consumption,and not easy to cause large-scale pollution,so it has a significant advantage for H.erinaceus fermentation.In this paper,the solid-state fermentation technology of H.erinaceus was reviewed,the selection of fermentation substrate and the regulation of fermentation conditions were introduced,and contents changes and influence factors of three kinds of active substances,mainly saccharides,flavonoids and diterpenoids produced by solid fermentation of H.erinaceus were summarized and analyzed,in order to provide a reference for the research of solid-state fermentation technology of H.erinaceus.
