摘  要:目的:通过改进高效液相色谱法测定小麦粉中偶氮甲酰胺的含量。方法:样品采用N,N-二甲基甲酰胺溶液振荡提取,提取液加三苯基膦衍生,以高效液相色谱仪紫外检测器测定。结果:通过优化标曲配制改进的方法具有良好的线性,R^(2)为0.99994,检出限为0.217 mg·kg^(-1),回收率在94.12%~100.20%,相对标准偏差为0.5%;通过提高衍生温度改进的方法具有良好的线性,R^(2)为0.99910,检出限为0.935 mg·kg^(-1),回收率为91.23%~95.35%,相对标准偏差为0.9%。结论:应用两种改进方法测定小麦粉中的偶氮甲酰胺,效果良好,线性、检出限、回收率和精密度均符合检测要求,能有效提高检测效率。Objective:To determine the content of azodicarbonamide in wheat flour by improved high performance liquid chromatography.Method:The samples were extracted by N,N-dimethylformamide solution with oscillation,and the extracts were derivatized with triphenylphosphine and determined by high performance liquid chromatography with ultraviolet detector.Result:The method improved by optimizing the standard solution series preparation showed good linearity with the R^(2)of 0.99994,the detection limit of 0.217 mg·kg^(-1),the recoveries were in the range of 94.12%~100.20%with the relative standard deviation of 0.5%;the improved method by increasing the derivative temperature has good linearity,R^(2)is 0.99910,detection limit is 0.935 mg·kg^(-1),recovery is 91.23%~95.35%,and relative standard deviation is 0.9%.Conclusion:The application of the two improved methods for the determination of azodicarbonamide in wheat flour was effective,and the linearity,detection limit,recovery and precision were in accordance with the requirements of the assay,which can effectively improve the efficiency of the assay.
