摘  要:乡韵宴依托岭南地区客家为代表,结合时下乡村振兴热题,充分融入地方元素、食材、菜品特色进行设计,宴席设计1盘花色冷拼盘、8道热菜、2道面点、1盘时令水果盘,选料多样、粗细合理、荤素搭配,宴席设计书设计合理,具有创新性和市场推广价值,为高职烹饪专业技能大赛的宴席设计提供有益参考。Relying on Hakka in the Lingnan area,the rural charm banquet is not only designed to fully integrate the local elements,ingredients,but also is designed in combination with the hot topic of rural rejuvenation.Banquet includes 1 plate of fancy cold platter,8 hot dishes,2 pasta dishes and 1 plate of fruit plate.The selection of banquet materials is diverse,with reasonable thickness and a combination of meat and vegetables.It is reasonable and innovative,and has market promotion value,providing useful reference for banquet design in vocational culinary professional skills competitions.
