摘 要:为评估澳洲坚果青皮在加工和应用中主要活性成分和抗氧化活性的差异,采用3种溶剂提取澳洲坚果青皮,测定其总多酚及其体外抗氧化活性。结果表明,低共熔溶剂提取得到的多酚量显著多于水和乙醇提取剂,其提取液具有良好的羟基自由基、DPPH自由基、ABTS+自由基清除能力,清除率分别达到89.46%,71.33%,98.81%。研究为澳洲坚果青皮的活性物质成分提取提供一定科学依据。To evaluate the difference of main active components and antioxidant activity of Macadamia nut peel in processing and application,three solvents were used to extract Macadamia nut peel,and its total polyphenols and antioxidant activity in vitro were determined.The results showed that the amount of polyphenols extracted by deep eutectic solvents was significantly higher than that extracted by water and ethanol,and the extract had good scavenging capacity of hydroxyl radical,DPPH radical,ABTS+radical,with the scavenging rates of 89.46%,71.33%and 98.81%respectively.This study provided a scientific basis for the extraction of active substances from Macadamia nut peel.
