摘　　要：悠悠大运河,千里通波,也携着人间烟火流淌千年。“商贾之辐辏,舟船之骈集”,大运河给齐鲁大地带来了大江南北的客商,也让各地美食从“漂流”到“扎根”,推动了南北食材、刀工技艺、烹调方式的融汇,鲁菜也由此获得了崭新的生命力。The Grand Canal has brought businessmen from all parts of China to Shandong,realized thetransformation of delicacies around China from“drifting”to“taking root”,promoted the integration of northern and southern ingredients,cutting techniques and cooking methods,and added new vitality to Shandong cuisine.
