摘 要:高分辨质谱技术凭借其极高的灵敏度、选择性、分辨率,在食品安全检测领域得到了广泛应用。本文详细阐述了高分辨质谱技术的基础理论与显著特性,重点介绍了高分辨质谱技术在食品农药残留、兽药残留、重金属元素检测方面的应用。同时,探讨了高分辨质谱技术在食品安全检测中面临的挑战,如基质效应、数据处理复杂等,并提出了相应的解决策略。高分辨质谱技术的不断发展和完善,必将为食品安全检测提供更加有力的技术支撑,为保障食品安全和人们健康贡献重要力量。High-resolution mass spectrometry technology has been widely used in the field of food safety testing due to its extremely high sensitivity,selectivity,and resolution.This article elaborates on the basic theory and significant characteristics of high-resolution mass spectrometry technology,and focuses on its application in the detection of food pesticide residues,veterinary drug residues,and heavy metal elements.At the same time,the challenges faced by high-resolution mass spectrometry technology in food safety testing,such as matrix effects and complex data processing,were discussed,and corresponding solution strategies were proposed.The continuous development and improvement of high-resolution mass spectrometry technology will surely provide more powerful technical support for food safety testing and contribute important contributions to ensuring food safety and people’s health.
