摘  要:研究评估了双镀铝包装在鸡精调味料中的应用,对比了其与单层镀铝包装的性能差异。结果显示:双镀铝包装在物理强度、阻隔性能以及对鸡精调味料品质保护方面均优于单层镀铝包装。双镀铝包装能有效防止氧气、水分和光线对鸡精调味料的影响,保持其新鲜度和品质稳定。感官评价和理化分析表明:双镀铝包装在高温高湿环境下能更好地维持鸡精调味料的色泽、形状和香气,同时控制水分含量和菌落总数,延长产品保质期。研究证实,双镀铝包装是鸡精调味料行业实现环保和可持续发展的有效选择。This study evaluated the application of double-metallized packaging in granulated chicken bouillon and compared its performance with single-metallized packaging. The results showed that the double-metallized packaging outperformed the single-metallized packaging in terms of physical strength, barrier properties, and protection of granulated chicken bouillon quality. The double-metallized packaging effectively prevented the impact of oxygen, moisture, and lighted on granulated chicken bouillon, and maintained its freshness and quality stability. Sensory evaluation and physicochemical analysis demonstrated that the double-metallized packaging better maintained the color, shape, and aroma of granulated chicken bouillon in high-temperature and high-humidity environments, while controlling moisture content and total microbial count,thus extending the product's shelf life. The study confirms that double-metallized packaging is an effective choice for the granulated chicken bouillon industry to achieve environmental protection and sustainable development.
