摘　　要：白酒行业是中国的重要产业。白酒酿造过程会形成大量固体废弃物-酒糟,酒糟含水率高、易腐败,具有二次污染环境的风险,但同时酒糟中也含有大量淀粉、蛋白质、脂肪、纤维素等物质,是一种优质的有机质资源。酒糟资源化利用技术一直是白酒行业的热点研究方向。该文归纳了酒糟组成成分,分析了酒糟处理必要性,总结了白酒酒糟在生产饲料、制备有机肥料、生产功能材料、制备能源、提取活性物质与制备原料、二次酿酒方面的研究进展,对酒糟资源化技术未来的发展方向进行了展望并提出建议。Baijiu industry is an important industry in China.In the brewing process of Baijiu,a large amount of solid waste-distillers'grains is formed.The distillers'grains have high moisture and are easily corrupted,which has the risk of secondary environmental pollution.However,the distillers'grains also contain a lot of starch,protein,fat,cellulose and other substances,which is a high-quality organic resource.The resource utilization technology of distillers'grains has been a hot research direction in Baijiu industry.In this paper,the composition of distillers'grains was summarized,and the necessity of processing distillers'grains was analyzed.The research progress of distillers'grains in feed production,organic fertilizer production,functional materials production,energy production,active material extraction and raw material preparation,secondary brewing was summarized.The future development direction of distillers'grains resource technology was prospected and suggestions were put forward.
