摘 要:基于专用型近红外光谱仪,以白酒、葡萄酒、果酒和啤酒为研究对象,建立了酒精度的近红外光谱分析法,在最优实验条件下(进样时间:90 s,进样量:35 m L,修正因子:-0.1),对市售不同产地和不同品种4种酒类样品(共40个)进行了检测;同时采用食品安全国家标准中密度瓶法、酒精计法、气相色谱法和数字密度计法对以上酒类样品进行检测分析,并与近红外光谱法进行方法比较。结果表明,该方法检测结果符合判定标准要求,与食品安全国家标准方法对比偏差较小,均小于10%,其中白酒RSD为0.09%~1.09%,葡萄酒RSD为1.66%~6.51%,果酒RSD为1.47%~8.44%,啤酒RSD为1.18%~4.60%,该方法前处理简便、精准度和精密度高、稳定性好。Based on the special near-infrared spectrometer,the near-infrared spectral analysis method of alcohol content in Baijiu,wine,fruit wine and beer was established.Under the optimal experimental conditions(injection time:90 s,sample size:35 mL,correction factor:-0.1),the four kinds of alcoholic beverages(40 samples)from different producing areas were tested.At the same time,density bottle method,alcohol meter method,gas chromatography method and digital densimeter method were used to detect the above samples,and the results were compared with that of the near infrared spectroscopy method.The results showed that the method was in accordance with the standard,and the deviation was small compared with the national standard methods.The RSD of Baijiu was 0.09%to 1.09%,the RSD of wine was 1.66%to 6.51%,the RSD of fruit wine was 1.47%to 8.44%,and the RSD of beer was 1.18%to 4.60%.The method was simple,and had high accuracy,high precision and good stability.
