摘 要:生物保鲜剂是指从生物体中提取或利用生物技术制成的,用于保持食品品质和安全性的天然物质。生物保鲜剂具有天然、安全、无毒副作用、可生物降解等优点。生物保鲜剂在食品中的应用吸引越来越多的研究者关注,相关研究结果也层出不穷。本文探讨生物保鲜剂及其原理,总结其在食品中的应用研究进展,对目前存在的问题进行分析,并做出展望,为生物保鲜剂今后的研究提供理论参考。Biological preservative is a kind of natural substance extracted from organism or made by biotechnology,which is used to keep food quality and safety.Biological preservative has the advantages of natural,safe,non-toxic and side-effect,biodegradable and so on.The application of biological preservative in food is especially important,and it gains the attention of an increasing number of researchers,and the related research results emerge one after another.This paper discusses the principle of biological preservatives,summarizes its application in food research,analyzes the existing problems at present,and puts forward the prospect in the future.This provides beneficial reference and theoretical basis for the development of biological preservative.
