摘 要:茶色素是从茶叶中提取的一类天然色素,因其潜在的健康益处而在多个学科领域受到关注。为探究2004—2024年茶色素的研究内容、热点与发展趋势,采用CNKI数据库2004—2024年茶色素的研究文献数据,运用COOC、VOSviwer以及CiteSpace可视化软件绘制图像,并对中文文献中的发文作者、机构、关键词等进行综合分析,得到相应可视化图谱。结果表明,2004—2024年共发表文献735篇,其中云南农业大学、中华全国供销合作总社杭州茶叶研究院与湖南农业大学对中文文献的贡献度位列前三。关键词中“茶黄素”的研究数量最多且是一直以来的热点,“茶色素”与“茶褐素”位列其后。本文旨在通过文献计量学的综合分析,系统地评价和梳理茶色素的研究现状和进展,以期为其未来的应用和发展提供有价值的参考。Tea pigments,a class of natural pigments extracted from tea leaves,have received attention in several disciplines due to their potential health benefits.In order to explore the research content,hotspot and development trend of tea pigment from 2004 to 2024,the research literature data of tea pigment from 2004 to 2024 in CNKI database were adopted,and the visualization software COOC,VOSviwer and CiteSpace were used to draw images.The author,institution and key words in the Chinese literature are comprehensively analyzed,and the corresponding visual map is obtained.The results showed that a total of 735 literatures were published from 2004 to 2024,among which Yunnan Agricultural University,Hangzhou Tea Research Institute of All-China Supply and Marketing Cooperative Society and Hunan Agricultural University ranked the top three in terms of their contributions to Chinese literature.Among the keywords,“theaflavin”has been the most studied and has been the hot spot,“tea pigment”and“theabrownin”are the next.This paper aims to systematically evaluate and sort out the research status and progress of tea pigment through comprehensive analysis of bibliometrics,in order to provide valuable reference for its future application and development.
