摘  要:真菌毒素是由丝状真菌产生的次生代谢物,曲霉菌和镰刀菌是在粮食作物中产生真菌毒素的主要植物病原体。我国已被记录的真菌毒素有400多种,其中黄曲霉毒素、单端孢霉烯族毒素和玉米赤霉烯酮是最常见的影响人类和动物健康的真菌毒素。由于真菌毒素对生物的毒性作用以及对国际贸易的重要性,粮食中真菌毒素的检测意义重大。本文综述粮食中的主要真菌毒素及其来源和危害,为粮食安全储存和真菌毒素检验提供参考和理论依据。Mycotoxins are secondary metabolites produced by filamentous fungi,and Aspergillus and Fusarium are the main plant pathogens that produce mycotoxins in food crops.More than 400 kinds of mycotoxins have been recorded in China,among which aflatoxin,trichothecenes and zearalenone are the most common mycotoxins affecting human and animal health.Because of the toxic effect of mycotoxins on organisms and the importance of international trade,the detection of mycotoxins in grain is of great significance.In this paper,the main mycotoxins in grain and their sources and hazards were reviewed to provide reference and theoretical basis for food safety storage and mycotoxin testing.
