摘 要:以福建连江“黄官一号”海带为研究对象,分别采用单独使用酵母菌、植物乳杆菌及二者混合进行发酵,分析测定不同发酵方式对海带中铅、镉、铜、铁含量影响。结果表明,发酵后的海带样品铅、镉、铜、铁含量均有不同程度下降,不同发酵方式对同种重金属的脱除效果存在差异,同种微生物对不同重金属的脱除效果也有不同。其中,酵母菌发酵对海带中铅、镉、铜、铁的脱除率分别为57%、29%、44%与45%;植物乳杆菌发酵对海带中铅、镉、铜、铁的脱除率分别为19%、11%、31%与32%;酵母菌和植物乳杆菌混合发酵对海带中铅、镉、铜、铁的脱除率分别为34%、33%、11%和36%。This study investigated dried kelp(Laminaria japonica Aresch)of Huangguan Yihao variety,ex-aming the effects of different fermentation methods on the content of lead,cadmium,copper and iron in kelp by using Saccharomyces cerevisiae,Lactobacillus plantarum and their combination.The results showed that the fermentation resulted in significant decreases in the contents of lead,cadmium,copper and ferrous ion.The removal rates of the same heavy metal were different depending on different fermentation methods.In addi-tion,the same microorganism had different removal rates depending on the different heavy metals.After the fermentation with Saccharomyces cerevisia,the removal rates of lead,cadmium,copper and ferrous were 57%,29%,44%and 45%,respectively.After the fermentation with L.plantarum,the removal rates of lead,cadmium,copper and ferrous were 19%,11%,31%and 32%,respectively.After the combined fermentation with Saccharomyces cerevisiae and L.plantarum,the removal rates of lead,cadmium,copper and ferrous were 34%,33%,11%and 36%,respectively.
