摘 要:食品安全问题日益严峻,非法添加物对人体健康构成严重威胁。本文综述了食品中常见非法添加物的种类及其危害,重点介绍了几种快速检测技术的原理、特点及应用。光谱分析法可快速检测多种添加剂,色谱分析法具有高效分离能力,色谱-质谱联用技术兼具高灵敏度和选择性,生物传感器技术则便于现场快速检测。这些技术各具优势,在检测速度、灵敏度和选择性等方面不断提升,为食品安全监管提供了有力支撑。Food safety issues are becoming increasingly severe,and illegal additives pose a serious threat to human health.This article summarizes the types and hazards of common illegal additives in food,with a focus on the principles,characteristics,and applications of several rapid detection techniques.Spectral analysis can quickly detect various additives,chromatographic analysis has efficient separation ability,chromatography-mass spectrometry combines high sensitivity and selectivity,and biosensor technology facilitates rapid on-site detection.These technologies have their own advantages,constantly improving in detection speed,sensitivity,and selectivity,providing strong support for food safety supervision.
