摘  要:新鲜的水果和蔬菜因其色香味俱佳且营养成分丰富,已成为人们日常饮食中不可或缺的一部分,但新鲜果蔬属于易腐食品,在采后易发生腐烂等品质劣变现象,导致损失严重。因此,果蔬的采后防腐保鲜仍然是一个重大挑战,需要更有效的方法来延长果蔬的采后贮藏。合理地使用防腐剂可以有效延长果蔬的保质期,动物源防腐剂是一种天然物质,可以有效抑制微生物生长、酶活性和氧化引起的食品降解,是一种生产中行之有效的保鲜方法。本文综述了来自动物的新型天然防腐剂作用机理及其在果蔬中的应用,为更好地开发果蔬采后贮藏技术提供参考。Fresh fruits and vegetables are essential components of a healthy diet due to their appealing colors,flavors,and abundant nutrients.However,their perishability often leads to spoilage and significant post-harvest loss.Therefore,developing effective post-harvest preservation methods remains a challenge,necessitating more effective methods to extend their storage life.Proper use of preservatives can effectively prolong the shelf life of fruits and vegetables.Animal-derived preservatives,as natural substances,can inhibit microbial growth,enzyme activity and food degradation caused by oxidation,serving as an effective preservation method in production.This paper summarized the mechanism of action of novel animal-derived natural preservatives and their applications in extending the shelf life of fruits and vegetables,providing insights for better development of post-harvest storage techniques for fruits and vegetables.
