摘  要:高温堆积是金种子馥合香白酒酿造过程中的重要环节,其堆积效果直接影响到酒的品质和口感。洒酒尾作为一种常见的工艺方法,在防止堆积粮糟结板、调节物料水分和温度、促进微生物生长和代谢等方面具有显著作用。本文详细探讨了高温堆积过程中洒酒尾的意义,并通过实验研究和理论分析,深入阐述了其对白酒酿造的影响和机制。研究结果为白酒酿造工艺的改进和优化提供了理论支持和实践指导。High temperature accumulation is an important link in the brewing process of Golden Seed Sweet and fragrant wine,and its accumulation effect directly affects the quality and taste of the wine.Spraying tail liquor,as a common process,has significant effects in preventing the accumulation of grain residue,regulating material moisture and temperature,promoting microbial growth and metabolism,and so on.In this paper,the significance of spraying tail liquor in the process of high temperature accumulation was discussed in detail,and its influence and mechanism on wine brewing were expounded in depth through experimental research and theoretical analysis.The research results provide theoretical support and practical guidance for the improvement and optimization of wine brewing technology.
