摘 要:为探究高校食堂环境中食源性细菌的特性,本文通过16S rDNA高通量测序技术对食堂样本的细菌群落进行评估。结果显示,不同环境样本中细菌群落存在显著差异,且人源性细菌含量较高,提示食堂环境微生物组可能来源于皮肤接触和人源污染。但大多数细菌物种丰度低于风险阈值,致病性程度较低。本研究为在大学食堂建立有效的食品安全监测系统提供了科学依据,有助于预防食源性微生物污染的发生。To investigate the characteristics of foodborne bacteria in university cafeteria environments,this study evaluated the bacterial communities of cafeteria samples using 16S rDNA high-throughput sequencing technology.The results showed that there were significant differences in bacterial communities among environmental samples.The high human-derived bacteria suggested that the environmental microbiome may be origin from skin contact and human contamination.However,the abundance of most bacterial species was below the risk threshold and the degree of pathogenicity was low.This study provides a scientific basis for establishing an effective food safety monitoring system in university cafeterias,which helps to prevent the occurrence of foodborne microbial contamination.
